  • 12 oz rotini or fusilli pasta
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and black pepper, to taste
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup whole milk
  • 6 oz Velveeta cheese, cubed
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish, optional)

Instructions

  1. 1. Cook the pasta in a large pot of salted boiling water until al dente (8-10 minutes). Reserve ½ cup of pasta water, drain, and set aside.
  2. 2. In a skillet over medium-high heat, heat olive oil and butter. Season the chicken with Cajun seasoning, garlic powder, smoked paprika, salt, and pepper. Sear the chicken for about 8-10 minutes until golden brown and cooked through. Remove from the skillet.
  3. 3. In the same skillet, reduce heat to medium and melt additional butter. Sauté minced garlic until fragrant. Stir in heavy cream and whole milk; bring to a gentle simmer.
  4. 4. Add Velveeta cubes until melted; then mix in cheddar and mozzarella cheeses until smooth and thickened. Season with salt and pepper.
  5. 5. Toss the cooked pasta into the sauce until well coated, adding reserved pasta water if needed to achieve desired consistency.
