  • 1 cup uncooked wild rice (rinsed)
  • 810 cups chicken broth
  • ½ cup half and half
  • ½ cup whole milk
  • 1 bay leaf
  • 1 Tbsp Italian Seasoning
  • 1 tsp thyme
  • 1 tsp parsley
  • ½ tsp sea salt
  • ½ tsp cracked pepper
  • ¼ cup flour

Instructions

  1. Prepare the vegetables by dicing onion, chopping carrots and celery, and mincing garlic.
  2. Layer chicken breasts in the slow cooker; top with garlic and seasonings.
  3. Add diced onion, carrots, celery, wild rice, and pour in chicken broth along with a bay leaf.
  4. Cook on low heat for 6-8 hours until rice is tender.
  5. Shred cooked chicken and return it to the soup.
  6. Whisk together flour with half-and-half and milk; stir into soup until creamy.
  7. Adjust consistency with more broth if needed and serve warm.
