  • 1 tbsp olive oil
  • 6 sausages (chicken, turkey, or beef)
  • 1 onion, chopped
  • 2 celery stalks, sliced
  • 2 carrots, sliced
  • 2 garlic cloves, minced
  • 1/2 tsp dried thyme
  • 3 tbsp all-purpose flour
  • 4 cups chicken or vegetable broth
  • 2 bay leaves
  • 1/2 cup wild rice
  • 3 medium potatoes, peeled and chunked
  • Salt, to taste
  • 1 1/2 cups light cream or half-and-half

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion, celery, carrots, and minced garlic. Sauté for about 5 minutes until softened.
  2. Add sausages and brown on all sides for about 8–10 minutes. Remove from pot and slice into bite-sized pieces.
  3. In the same pot, stir in dried thyme and flour; cook for about 2 minutes. Gradually add broth while stirring to avoid lumps.
  4. Return sliced sausages to the pot along with bay leaves. Add wild rice and chunked potatoes; bring to a boil then reduce heat to simmer for about 30 minutes until potatoes are tender.
  5. Stir in light cream or half-and-half and season with salt; simmer for an additional 10 minutes before serving.
