  • 80g mascarpone
  • 120ml coconut milk
  • 140g softened butter
  • 160g all-purpose flour
  • 25g unsweetened cocoa powder
  • Vegan gelling agent (agar-agar or pectin)
  • Gooey cocoa spread
  • 80g powdered sugar

Instructions

  1. Prepare the coconut mousse by whipping together heavy cream and mascarpone until fluffy. Gradually mix in powdered sugar.
  2. Soak the vegan gelling agent in cold water, then warm coconut milk, dissolve the gelling agent, and fold into the whipped mixture.
  3. Pour mousse into hemisphere molds, adding a layer of gooey cocoa spread before freezing for at least 6 hours.
  4. Make cocoa Breton shortbread by mixing all ingredients, chilling the dough, rolling it out, cutting shapes, and baking until golden.
  5. Once cooled, carefully unmold domes onto shortbread bases and garnish with grated coconut before serving.
