  • 2 tbsp vegetable oil
  • 1 large yellow onion, sliced
  • 4 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp red or yellow curry paste
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 cup beef broth
  • 1 cup jasmine rice
  • 4 garlic naan

Instructions

  1. Season beef cubes with salt and pepper. In a heavy-bottomed pot, heat vegetable oil over medium-high heat. Sear the beef until brown on all sides, then set aside.
  2. In the same pot, reduce heat to medium and sauté sliced onion until translucent. Add minced garlic and grated ginger; cook until fragrant.
  3. Stir in curry paste and turmeric, then gradually add coconut milk and broth to combine. Return seared beef to the pot along with brown sugar and lime juice.
  4. Bring to a gentle simmer, cover, and braise on low heat for 1.5 to 2 hours until tender.
  5. Cook jasmine rice according to package instructions and warm garlic naan in a skillet until lightly charred.
  6. Serve the finished beef over jasmine rice with warm garlic naan on the side.
