  • 1 large yellow onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp curry powder
  • 1 tsp ground turmeric
  • 1 tsp ground coriander
  • 1/2 tsp chili flakes (optional)
  • 1 tbsp tomato paste
  • 1 (14 oz) can full-fat coconut milk

  2. Add beef chunks, season with salt and pepper, and brown on all sides for about 8-10 minutes.
  3. Stir in curry powder, turmeric, coriander, and optional chili flakes to coat the beef evenly.
  4. Incorporate tomato paste followed by coconut milk; mix well.
  5. Bring to a gentle boil, then reduce heat to low. Cover and simmer for about 2 hours until beef is tender, stirring occasionally.
