  • 1 tsp chili flakes (optional)
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 can (13.5 oz) coconut milk
  • 1 cup beef broth
  • 1 tbsp tomato paste
  • Salt and black pepper, to taste
  • Fresh cilantro, chopped, for garnish
  • 2 cups all-purpose flour
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 cup plain yogurt, room temperature

Instructions

  1. Gather and prepare all ingredients: chop onion, mince garlic, grate ginger.
  2. In a large pot, heat vegetable oil over medium heat; sauté onion until translucent.
  3. Add garlic and ginger; cook until fragrant.
  4. Brown the beef stew meat in the pot on all sides.
  5. Stir in curry powder, cumin, and optional chili flakes; mix well.
  6. Incorporate chickpeas, coconut milk, beef broth, tomato paste, salt, and pepper.
  7. Bring to a gentle boil; reduce heat and simmer uncovered for 45 minutes until beef is tender.
  8. Meanwhile, prepare garlic naan by mixing flour, salt, baking powder with yogurt to form dough; roll into rounds and cook in a skillet until golden brown.
  9. Garnish the curry with fresh cilantro before serving alongside warm garlic naan.
