  • 1 pound ground turkey
  • 1 medium yellow onion (diced)
  • 4 medium carrots (finely diced)
  • 4 medium celery ribs (finely diced)
  • 5 teaspoons minced garlic
  • 4 cups beef broth
  • 2 (15 ounce) cans diced tomatoes
  • 1 (15 ounce) can red kidney beans (drained and rinsed)
  • 1 (15 ounce) can cannellini beans (drained and rinsed)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1 1/2 cups ditalini pasta
  • Optional: Fresh basil and grated Parmesan cheese for garnish

Instructions

  1. In a large pot, cook ground turkey over medium-high heat until browned, about 5 minutes. Drain any excess grease.
  2. Add diced onion, carrots, and celery to the pot; sauté until softened, about 7 to 10 minutes. Stir in minced garlic during the last minute of cooking.
  3. Pour in beef broth and diced tomatoes; add kidney beans and cannellini beans. Season with salt, pepper, and dried thyme. Bring to a boil.
  4. Once boiling, add ditalini pasta; reduce heat to medium and simmer until pasta is al dente, about 7 minutes.
  5. Serve hot, garnished with fresh basil and grated Parmesan cheese if desired.
