  • 1 1/4 cups orange segments (mandarin oranges, clementines, or tangerines)
  • 1/2 cup pomegranate seeds (or dried cranberries)
  • 1/2 cup crumbled feta cheese
  • 1/2 cup roughly chopped candied pecans
  • 1/3 cup olive oil
  • 1 tablespoon honey
  • 2 teaspoons Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon minced shallot
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine 7 cups of mixed greens with 1 1/4 cups of orange segments and 1/2 cup of pomegranate seeds.
  2. Sprinkle 1/2 cup of crumbled feta cheese and 1/2 cup of roughly chopped candied pecans over the top.
  3. For the dressing, whisk together 1/3 cup olive oil, 1 tablespoon honey, 2 teaspoons Dijon mustard, 2 tablespoons apple cider vinegar, minced shallot, salt, and pepper in a small bowl until smooth.
  4. Drizzle the dressing over the salad just before serving and gently toss to coat.
