  • 2 cups white sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 cup unsweetened cocoa powder
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • 2 ounces chocolate almond bark
  • 1½ cups white chocolate chips
  • ½ can sweetened condensed milk (7 oz)
  • ½ teaspoon mint extract
  • Green food coloring

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream butter and sugar until fluffy. Add eggs one at a time, then mix in vanilla.
  3. Gradually add the cocoa powder, flour, salt, baking soda, and baking powder until just combined.
  4. Roll dough into 1-inch balls and place on a lined baking sheet. Make an impression in the center of each ball with your thumb.
  5. Bake for 12 minutes; if thumbprints fade, reapply pressure with a spoon after removing from oven.
  6. For the filling, melt white chocolate chips and sweetened condensed milk in a saucepan over medium heat until smooth. Stir in mint extract.
  7. Spoon the mint fudge into each cookie’s center.
  8. Melt chocolate almond bark and drizzle over cookies once fudge has set.
