  • 2 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt & pepper to taste
  • 2 medium sweet potatoes, sliced
  • Pinch of cinnamon or smoked paprika (optional)
  • Salt to taste
  • 2 cups broccoli florets

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Toss sliced sweet potatoes in 1 tbsp olive oil, salt, and optional seasoning (cinnamon or smoked paprika). Spread on a baking sheet and roast for 25-30 minutes until tender.
  3. While sweet potatoes roast, rub chicken breasts with 1 tbsp olive oil and seasonings. Grill or sear in a hot pan over medium-high heat until golden brown and cooked through (internal temperature should reach 165°F/74°C). Allow resting before slicing.
  4. Steam broccoli florets in a pot using a steamer basket over boiling water for about 5-6 minutes until just tender.
  5. In meal prep containers, layer broccoli, roasted sweet potatoes, and sliced chicken. Let cool before sealing containers.
