  • 2 boneless skinless chicken breasts (or thighs)
  • 6 cloves garlic, minced
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 ½ cups chicken broth
  • ¼ cup heavy cream (optional)
  • Salt and pepper, to taste
  • 2 pounds Yukon Gold potatoes, peeled and cubed
  • ½ cup milk
  • 1 cup shredded cheddar cheese

Instructions

  1. Season the chicken with salt and pepper. In a skillet over medium-high heat, sear until golden brown and cooked through (165°F). Set aside.
  2. In the same skillet, melt butter over medium heat. Sauté minced garlic for about 1 minute. Stir in flour to create a roux and cook for 1–2 minutes.
  3. Gradually whisk in chicken broth until thickened; add cream if desired along with seasoning.
  4. Boil salted water in a pot and cook cubed potatoes for 12–15 minutes until tender; drain.
  5. Mash potatoes with butter, milk, and cheddar cheese until creamy; season as needed.
  6. Serve mashed potatoes topped with sliced chicken and gravy.
