  • 1/2 cup Brown Sugar
  • 1/2 cup Granulated Sugar
  • 1 large Egg
  • 1 teaspoon Vanilla Extract
  • 1 1/4 cups Unbleached Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Kosher Salt
  • 1/2 cup Quick Oats
  • 1 cup Mini Chocolate Chips
  • 1 1/4 cups Crushed Cadbury Mini Eggs (divided)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together softened butter, brown sugar, and granulated sugar until smooth. Add egg and vanilla extract; mix until fully incorporated.
  3. In another bowl, whisk together flour, baking soda, salt, and oats. Gradually add to wet ingredients and mix until just combined.
  4. Fold in mini chocolate chips and most of the crushed Cadbury Mini Eggs (reserve some for topping).
  5. Drop tablespoon-sized portions onto the prepared baking sheet about 2 inches apart. Top each cookie with reserved crushed mini eggs.
  6. Bake for about 9 minutes or until edges are lightly golden. Cool on the baking sheet before transferring to a wire rack.
