  • 8 Hatch green chiles
  • 8 to 10 oz Oaxaca cheese (or similar melting cheese)
  • 6 large eggs
  • 2/3 cup all-purpose flour
  • Vegetable oil (for frying)
  • 5 medium tomatoes (Roma or any fresh variety)
  • 1 small white onion
  • 5 garlic cloves
  • 2 tbsp chopped cilantro
  • 1 tsp salt
  • 1/4 cup sliced jalapenos (optional)

Instructions

  1. Broil the chiles until blackened; steam in a ziplock bag.
  2. Peel and stuff each chile with cheese; secure with toothpicks.
  3. Prepare a light egg batter by beating egg whites and folding in yolks.
  4. Dredge stuffed chiles in flour and dip in the egg batter.
  5. Fry until golden brown and prepare the sauce by blending tomatoes, onion, garlic, cilantro, and salt.
  6. Serve hot with sauce drizzled over the top.
