  • 68 Jalapeño peppers
  • Olive oil
  • 5 oz Mexican chicken sausage
  • 5 oz Queso Asadero cheese, coarsely grated
  • Corn tortillas (for serving)
  • Chopped fresh cilantro (for garnish)
  • Kosher salt (to taste)

Instructions

  1. Boil jalapeños in water in a medium saucepan for 5 minutes until softened. Remove from heat and cool.
  2. In a skillet, heat olive oil over medium heat. Cook chicken sausage until browned, stirring frequently.
  3. Cut a small slit in each jalapeño to create a pocket and remove seeds and veins.
  4. Stuff each pepper with shredded Queso Asadero cheese and cooked chicken sausage. Arrange on a baking sheet.
