  • 1 bunch celery
  • 4 Persian cucumbers
  • 1 15-oz can chickpeas, rinsed and drained
  • 1 shallot, minced
  • 1/2 cup chopped fresh parsley
  • 1/3 cup raisins
  • 1/3 cup roughly chopped pistachios
  • 1/4 cup olive oil
  • Juice and zest of 1 lemon
  • 1/2 tsp sea salt
  • 1/4 tsp ground black pepper

Instructions

  1. Chop the celery into small cubes and place them in a large mixing bowl.
  2. Cut the cucumbers lengthwise into strips and then into small pieces; add to the bowl with celery.
  3. Add the minced shallot, chopped parsley, chickpeas, raisins, and pistachios to the bowl.
  4. Drizzle with olive oil, lemon juice and zest, then sprinkle with salt and pepper.
  5. Mix all ingredients thoroughly until well combined.
