  • 12 cups cubed French bread
  • 3 ripe pears, peeled and diced
  • 5 large eggs
  • 2 cups milk
  • 1 cup heavy whipping cream
  • 2 tsp ground cardamom
  • ½ cup sugar
  • 1 ½ cups sugar for syrup
  • 2 tbsp butter
  • 6 tbsp butter for syrup
  • ½ tsp kosher salt
  • ¼ cup orange juice
  • Zest of 1 orange
  • 10 cardamom pods
  • ¼ cup water
  • Pinch ground cardamom

Instructions

  1. 1. Preheat oven to 350°F (175°C).
  2. 2. In a large bowl, mix cubed bread, melted butter, diced pears, brown sugar, apple juice (if using), and 1 tsp ground cardamom until well combined.
  3. 3. In another bowl, whisk together eggs, milk, heavy cream, sugar, and salt until smooth. Pour over the bread mixture and let it soak for 30 minutes.
  4. 4. Transfer to a greased baking dish, sprinkle with raw turbinado sugar if desired, and bake for about 60 minutes or until golden brown.
  5. 5. For the syrup: In a saucepan over medium heat, combine cardamom pods, sugar, water, butter, orange juice, zest of one orange, kosher salt, and a pinch of ground cardamom; simmer until dissolved.
  6. 6. Serve warm drizzled with cardamom syrup.
