  • 5 strips thinly sliced turkey
  • 8 oz farfalle pasta
  • 1 cup halved cherry tomatoes
  • 1 cup halved fresh mozzarella balls
  • 1/2 cup thinly sliced fresh basil
  • 3 tbsp extra virgin olive oil
  • 1.5 tbsp balsamic vinegar
  • 1 tbsp lemon juice
  • 1 garlic clove grated
  • 1/4 tsp red pepper flakes
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat the oven to 400°F. Arrange turkey slices on a foiled baking sheet and bake for 10-12 minutes until crispy.
  2. Cool the turkey slices, then dice them into preferred sizes.
  3. Meanwhile, cook the farfalle pasta according to package instructions. Drain and rinse under cool water.
  4. In a bowl, whisk together olive oil, balsamic vinegar, lemon juice, garlic, red pepper flakes, salt, and pepper for the vinaigrette.
  5. Combine the cooked pasta with vinaigrette in a large bowl. Add diced turkey slices, cherry tomatoes, mozzarella balls, and basil. Toss gently and serve immediately or chill before serving.
