  • 1 lb boneless skinless chicken breasts
  • 12 oz linguine pasta
  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • 1 cup whole milk
  • 6 oz Velveeta cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and black pepper, to taste

Instructions

  1. Cook the linguine in boiling salted water until al dente; drain and set aside.
  2. In a skillet, heat olive oil and sear chicken pieces seasoned with Cajun spices until golden brown and fully cooked. Remove from the skillet.
  3. In the same skillet, sauté minced garlic in butter until fragrant. Add heavy cream and milk, stirring until simmering.
  4. Melt Velveeta into the sauce, then stir in mozzarella and Parmesan until smooth.
  5. Toss the drained linguine in the sauce before serving topped with Cajun chicken bites.
