  • 2 cups whipped cream (or coconut cream)
  • 1 cup bubblegum-flavored yogurt
  • 1 teaspoon bubblegum extract
  • 1 tablespoon vegan gelatin (or agar-agar)
  • ¼ cup powdered sugar
  • ½ cup mini vegan marshmallows
  • ¼ cup colorful sprinkles

Instructions

  1. Combine crushed graham crackers, melted butter, and sugar in a bowl until resembling wet sand.
  2. Press the mixture into a greased 9×9 inch baking pan.
  3. Chill the base in the refrigerator.
  4. Dissolve vegan gelatin in warm water and let it thicken.
  5. Mix whipped cream, yogurt, extract, and powdered sugar until smooth.
  6. Gently fold in dissolved gelatin.
  7. Pour filling over the chilled crust and spread evenly.
  8. Return to the refrigerator for at least 60 minutes until firm.
  9. Decorate with mini marshmallows and sprinkles before serving.
