  • 3/4 cup chopped broccoli stems
  • 2 cups finely chopped broccoli florets
  • 1 cup chopped leek (white and light green parts)
  • 4 cloves garlic (minced)
  • 4 cups chicken or vegetable broth
  • 12 cups water
  • 1 tbsp mustard powder
  • Salt (to taste)
  • Pepper (to taste)
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 1 cup dried orzo
  • 8 oz sharp cheddar cheese (grated)
  • 1 cup heavy whipping cream
  • 57 slices turkey slices

Instructions

  1. Preheat your oven to 400°F.
  2. In a large pot over medium heat, melt olive oil and butter together. Add chopped leeks, broccoli stems, and potato; sauté for about 3 minutes.
  3. Stir in minced garlic, salt, pepper, and mustard powder; sauté for another minute.
  4. Pour in chicken or vegetable broth and water (1-2 cups based on desired thickness). Bring to a bubble and simmer for about 10 minutes until potatoes are soft.
  5. Place turkey slices on a baking sheet; crisp in the oven for about 10–12 minutes.
  6. Blend the soup until smooth using a blender or immersion blender; return to pot and simmer gently.
  7. Stir in dried orzo and cook while stirring frequently for about 5 minutes. Add chopped broccoli florets and heavy cream; cook until orzo is tender (about another 4–5 minutes).
  8. Mix in grated sharp cheddar cheese until melted.
  9. Serve hot topped with crispy turkey slices and enjoy!
