  • 2 large chicken breasts
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1/2 medium onion (chopped)
  • 3/4 cup chicken broth
  • 1 (5.2 oz) package Boursin Fine Herbs & Garlic cheese (softened)
  • 1/2 teaspoon garlic powder
  • Salt & pepper (to taste)

Instructions

  1. Cut chicken breasts in half lengthwise and season with garlic powder, salt, and pepper.
  2. Heat olive oil and butter in a skillet over medium-high heat. Cook the seasoned chicken for 5-6 minutes on each side until fully cooked through. Remove from skillet and set aside.
  3. In the same skillet, sauté chopped onions for about 5 minutes until softened.
  4. Add chicken broth and Boursin cheese to the skillet; stir until smooth and let simmer for about 5 minutes.
  5. Return chicken to skillet; warm through for another couple of minutes until heated thoroughly.
  6. Taste and adjust seasoning if necessary before serving.
