  • 2 cups fresh blueberries
  • 1/3 cup granulated sugar (for crumble)
  • 1/3 cup all-purpose flour (for crumble)
  • 3 tablespoons salted butter (softened, but not melted)

Instructions

  1. Preheat your oven to 350ºF. Grease and flour a 9"x5" loaf pan.
  2. In a medium bowl, whisk together sugar, milk, canola oil, egg, and vanilla until smooth.
  3. In another bowl, mix flour, baking powder, and salt. Gradually add to wet mixture and stir gently until just combined.
  4. Fold in blueberries and pour the batter into the prepared pan.
  5. For the crumble topping, mix sugar, flour, and butter until crumbly; sprinkle over the batter.
  6. Bake for about 55-60 minutes or until a toothpick inserted comes out clean.
  7. Allow to cool in the pan for 10 minutes before transferring to a wire rack.
