  • 3 tbsp granulated white sugar
  • 1/2 tsp vanilla
  • 1/4 cup granulated white sugar
  • 2 tsp black cocoa powder
  • 1 1/2 cups all-purpose flour, spooned and leveled
  • 1/2 cup black cocoa powder
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup light brown sugar, packed
  • 1/4 cup granulated white sugar
  • 2 egg yolks, at room temperature
  • 1 1/2 tsp vanilla

Instructions

  1. Prepare the cheesecake filling by mixing cold cream cheese, granulated sugar, and vanilla until smooth.
  2. In a separate bowl, whisk together granulated sugar, black cocoa powder, flour, baking powder, and salt.
  3. Cream softened butter with light brown sugar and remaining granulated sugar until fluffy. Mix in egg yolks and vanilla.
  4. Combine wet and dry ingredients until just mixed.
  5. Preheat oven to 350°F (175°C). Form cookie dough around cheesecake filling into balls.
  6. Bake on parchment-lined sheets for 10-12 minutes until edges are firm.
