  • 1 tablespoon cornstarch
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • 1 medium onion, sliced
  • 1 bell pepper (red or green), sliced
  • 8 ounces mushrooms (shiitake or button), sliced
  • 3 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon honey
  • ½ teaspoon rice vinegar
  • 2 green onions, chopped

Instructions

  1. In a mixing bowl, coat thinly sliced chicken with cornstarch, salt, and black pepper.
  2. Heat oil in a large skillet over medium-high heat and stir-fry the chicken until browned (about 4-5 minutes). Remove and set aside.
  3. In the same skillet, stir-fry sliced onion and bell pepper for 2-3 minutes. Add sliced mushrooms and minced garlic; cook until softened.
  4. Whisk together soy sauce, oyster sauce, honey, rice vinegar, and additional black pepper in a bowl.
  5. Add the sauce to the vegetables in the skillet and return the chicken. Toss to combine until heated through (1-2 minutes).
