  • 1 lb chicken breast, cut into bite-sized pieces
  • 2 tbsp olive oil or sesame oil
  • 2 cloves garlic, minced
  • 1/2 cup soy sauce
  • 1/3 cup pineapple juice
  • 2 tbsp honey or brown sugar
  • 1 tbsp rice vinegar or apple cider vinegar
  • 1 tsp cornstarch
  • 1 tbsp water
  • 1.5 cups cooked rice
  • 1 cup pineapple chunks
  • 1/2 red bell pepper, diced
  • 1/4 cup green onions, chopped
  • Sesame seeds, for garnish
  • Crushed red pepper, optional

Instructions

  1. Heat oil in a large skillet over medium heat until shimmering.
  2. Add the bite-sized chicken pieces to the pan and cook for about 6 to 8 minutes until golden brown and cooked through. Remove the chicken from the pan and set it aside on a plate.
  3. In the same pan, add minced garlic and cook for about 30 seconds until fragrant.
  4. Stir in soy sauce, pineapple juice, honey (or brown sugar), and vinegar, and simmer this mixture for about 2 minutes.
  5. In a small bowl, whisk together cornstarch with water. Add this mixture to your simmering sauce and continue simmering until thickened.
  6. Return your cooked chicken to the pan along with pineapple chunks and diced red bell pepper. Cook everything together for an additional 3 to 4 minutes until fully coated in sauce.
  7. Stir in cooked rice and heat through until everything is combined well.
  8. Garnish with chopped green onions and sesame seeds, and serve.
