  • 16 oz rotini pasta
  • 10 oz turkey slices (chopped)
  • 1 cup English cucumber (quartered and sliced)
  • 2 cups grape tomatoes (halved)
  • 1 ½ cups bell peppers (diced)
  • ½ cup red onion (chopped)
  • 8 oz black olives (sliced)
  • 8 oz fresh mozzarella pearls
  • 1 ¼ cup olive oil
  • 3 tbsp lemon juice (freshly squeezed)
  • 1 ½ tbsp Italian seasoning
  • 2 tsp sugar
  • 3 tbsp red apple vinegar
  • 2 tsp garlic (minced)
  • 1 tsp Dijon mustard
  • ½ tsp salt
  • ½ tsp black pepper

Instructions

  1. Cook the rotini pasta according to package directions until al dente. Drain and rinse under cold water to cool.
  2. In a medium bowl, whisk together olive oil, lemon juice, Italian seasoning, apple cider vinegar, garlic, Dijon mustard, sugar, salt, and pepper.
  3. In a large mixing bowl, combine cooled pasta with turkey slices and all veggies. Pour the dressing over the salad and mix well.
