Ingredients

Scale
  • 2 cups frozen wild blueberries
  • 1/4 cup granulated sugar
  • Juice of 1/2 small lemon
  • 2 cups heavy whipping cream (cold)
  • 8 ounces cream cheese (softened)
  • 2 tablespoons sour cream
  • 1/4 cup powdered sugar (adjust according to your sweetness preference)
  • 1 teaspoon vanilla extract
  • 2 sheets pre-made puff pastry (frozen or refrigerated)
  • 1 egg (whisked, for egg wash)
  • 1 tablespoon powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C). Cut two sheets of thawed puff pastry into four squares each.
  2. Brush each square with whisked egg and fold into triangles, sealing edges well.
  3. Place on a baking sheet lined with parchment paper and bake for 22-25 minutes until golden brown.
  4. While baking, make the berry jam by simmering blueberries, sugar, and lemon juice until thickened.
  5. Prepare the cream filling by whipping cold heavy cream with powdered sugar and vanilla extract until stiff peaks form. Mix in softened cream cheese and sour cream until combined.
  6. Once croissants are cool, slice them open, spread with berry jam, fill with cream, and dust with powdered sugar.
