  • 1 tablespoon vegetable oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon turmeric
  • ½ teaspoon chili flakes (optional)
  • 1 can (14 oz) coconut milk
  • Water or broth (enough to cover the beef)

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Sauté chopped onion until translucent, then add minced garlic and grated ginger until fragrant.
  2. Increase heat slightly and brown the beef cubes in batches until evenly browned.
  3. Add spices (curry powder, ground cumin, turmeric, chili flakes) and stir well. Pour in water or broth to cover the meat; bring to a simmer.
  4. Stir in coconut milk once simmering gently. Reduce heat to low, cover, and cook for about 1.5 hours or until beef is tender.
  5. Taste and adjust seasoning as needed before serving over steamed rice or alongside crispy fries and garlic naan.
