Ingredients

Scale
  • 1½ cups graham cracker crumbs (or vanilla wafers)
  • ¼ cup granulated sugar (optional)
  • 6 tbsp unsalted butter, melted
  • 2 ripe bananas, mashed
  • 24 oz cream cheese, softened
  • ¾ cup granulated sugar
  • 3 large eggs
  • ½ cup sour cream or Greek yogurt
  • 1 tsp vanilla extract
  • Fresh banana slices and whipped cream for topping

Instructions

  1. Preheat oven to 325°F (163°C). In a bowl, mix graham cracker crumbs, optional sugar, and melted butter. Press firmly into a springform pan and bake for 8–10 minutes until golden.
  2. Beat softened cream cheese until smooth; gradually add sugar while mixing. Add eggs one at a time, followed by sour cream or Greek yogurt, vanilla extract, and mashed bananas until just blended.
  3. Pour filling over cooled crust in the springform pan. Place in a larger baking dish filled with water (water bath) and bake for 60–70 minutes; edges should be set while the center remains slightly jiggly.
  4. Turn off the oven and cool the cheesecake inside with the door ajar for about an hour before transferring it to the fridge to chill for at least 4 hours or overnight.
  5. Before serving, top with fresh banana slices and whipped cream.
