Ingredients

  • 1 slice sourdough or rustic bread
  • 1 ripe avocado
  • 2 eggs
  • 1 tbsp milk (optional)
  • 1 tsp butter or olive oil
  • Salt and black pepper
  • 1 tsp matcha powder
  • ½ cup hot water (not boiling)
  • ½ cup cold milk (dairy or plant-based)
  • Ice cubes

Instructions

  1. Toast the bread until golden brown. Slice the avocado and fan it over the toast. Season with salt and pepper.
  2. In a mixing bowl, whisk eggs with milk (if using) and a pinch of salt. Heat butter in a nonstick skillet over medium-low heat, pour in egg mixture, and gently stir until soft and creamy. Season with black pepper.
  3. In another bowl, whisk matcha powder with hot water until frothy. Fill a glass with ice cubes, add cold milk, then pour over whisked matcha. Sweeten if desired.
  4. Serve the avocado toast alongside fluffy scrambled eggs and enjoy with iced matcha.
