1 slice sourdough or rustic bread
1 ripe avocado
2 eggs
1 tbsp milk (optional)
1 tsp butter or olive oil
Salt and black pepper
1 tsp matcha powder
½ cup hot water (not boiling)
½ cup cold milk (dairy or plant-based)

Instructions
Toast the bread until golden brown. Slice the avocado and fan it over the toast. Season with salt and pepper.
In a mixing bowl, whisk eggs with milk (if using) and a pinch of salt. Heat butter in a nonstick skillet over medium-low heat, pour in egg mixture, and gently stir until soft and creamy. Season with black pepper.
In another bowl, whisk matcha powder with hot water until frothy. Fill a glass with ice cubes, add cold milk, then pour over whisked matcha. Sweeten if desired.
