  • 1 lb dried pinto beans
  • 4 cups chicken stock
  • 1 bottle beef broth (light)
  • 6 slices turkey bacon
  • 1 medium onion
  • 2 jalapeno peppers
  • 3 cloves garlic
  • Fresh cilantro
  • 2 tomatoes
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp salt (to taste)
  • 1 tsp black pepper

Instructions

  1. Soak the pinto beans overnight in water.
  2. Drain and place beans in a large pot. Add chicken stock, beef broth, and water along with salt beef or chicken bone.
  3. Simmer on low heat for about 1½ hours.
  4. In a skillet, cook turkey bacon until crispy; set aside.
  5. Sauté onion, jalapenos, and garlic in remaining grease until soft.
  6. Add sautéed vegetables and turkey bacon to the pot with beans. Stir in optional beef lard, cilantro, tomatoes, cumin, oregano, salt, and pepper.
  7. Continue simmering for another 1½ hours until beans are tender.
