  • 2/3 cup vegetable oil
  • 2 large eggs, room temperature
  • 3/4 cup brown sugar, packed (light or dark)
  • 3/4 cup granulated sugar
  • 1/2 cup sour cream, room temperature
  • 1 tsp pure vanilla extract
  • 23 large honey crispy apples, grated

Instructions

  1. Preheat your oven to 350°F and prepare a 9×9-inch baking pan lined with parchment paper.
  2. In a bowl, whisk together the dry ingredients: flour, baking soda, salt, cinnamon, ginger, nutmeg, allspice, and cloves.
  3. In another bowl, combine the wet ingredients: vegetable oil, eggs, brown sugar, granulated sugar, sour cream, and vanilla extract until smooth.
  4. Fold the wet mixture into the dry ingredients just until combined.
  5. Gently fold in the grated apples until evenly distributed.
  6. Pour the batter into the prepared pan and bake for 35-40 minutes or until a toothpick comes out clean.
  7. Allow the cake to cool before topping it with brown sugar icing made by melting butter with brown sugar and heavy cream then whisking in powdered sugar.
