  • 1/2 teaspoon salt
  • 1 1/4 teaspoons ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon ground nutmeg
  • 1/3 cup apple cider
  • 1/3 cup fresh apple (peeled and grated)

Instructions

  1. Preheat the oven to 325°F (163°C) and line a 9 x 5 loaf pan with parchment paper.
  2. In a stand mixer, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs one by one, mixing well after each addition, then incorporate the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, spices, and salt.
  5. Gradually add the dry mixture alternately with the apple cider into the butter mixture, starting and ending with dry ingredients.
  6. Gently fold in the grated apples using a spatula.
  7. Pour the batter into the prepared loaf pan and bake for about 55 to 60 minutes or until a toothpick comes out clean.
