  • 3/4 cup brown sugar
  • 2 tsp baking powder
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp salt
  • 2 large eggs
  • 1/2 cup milk
  • 1/4 cup melted butter
  • For the glaze: 2 tbsp powdered sugar and 1-2 tbsp milk

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin with liners or grease it.
  2. In a bowl, toss diced apples with a sprinkle of cinnamon.
  3. In a large bowl, whisk together flour, brown sugar, baking powder, ground cinnamon, and salt until combined.
  4. In another bowl, mix eggs, milk, and melted butter until smooth.
  5. Gradually add the wet mixture to the dry ingredients and stir gently until just combined. Fold in the spiced apple chunks.
  6. Spoon the batter into the muffin tin, filling each cup about three-quarters full.
  7. Bake for 20-25 minutes or until golden brown. A toothpick inserted into the center should come out clean.
  8. For the glaze, whisk powdered sugar with milk until smooth and drizzle over warm muffins.
