  • 1 teaspoon ground cinnamon (for apple filling)
  • 2 teaspoons cornstarch (for apple filling)
  • 690 g cream cheese (softened to room temperature for cheesecake filling)
  • 75 g granulated sugar (for cheesecake filling)
  • 100 g Greek yogurt (for cheesecake filling)
  • 2 teaspoons vanilla extract (for cheesecake filling)
  • 1/2 teaspoon ground cinnamon (for cheesecake filling)
  • 1/4 teaspoon ground ginger (for cheesecake filling)
  • 1/4 teaspoon ground nutmeg (for cheesecake filling)
  • 3 large eggs (room temperature, for cheesecake filling)

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. In a bowl, mix melted butter and crushed biscoff cookies; press into a springform pan for the crust.
  3. Toss sliced apples with brown sugar, cinnamon, and cornstarch; set aside.
  4. Beat softened cream cheese until smooth; add sugar, Greek yogurt, vanilla, spices, and eggs, mixing until combined.
  5. Pour cheesecake batter over the crust, then layer apples on top.
  6. Prepare streusel by combining melted butter with flour, brown sugar, and oats; sprinkle over apples.
  7. Bake for about 85 minutes or until slightly jiggly in the center; cool in the oven for an hour before refrigerating for at least four hours before serving.
