  • 1 cup oats (ground into flour)
  • 1/2 cup rice flour
  • 4 tbsp cornstarch
  • 2 tbsp coconut sugar
  • 1 tbsp flax seeds (ground)
  • 1 tsp baking powder
  • 1 1/2 cups plant-based milk
  • 3 apples (peeled, cored, and chopped)
  • 1 tsp cinnamon
  • 1 small banana
  • 1/2 tbsp lemon juice (or lime juice)
  • 1/2 tsp vanilla extract
  • oil (for frying)

Instructions

  1. In a bowl, whisk together all dry ingredients: oat flour, rice flour, cornstarch, coconut sugar, ground flax seeds, and baking powder.
  2. In a blender or food processor, combine the wet ingredients: plant-based milk, banana, lemon juice, and vanilla extract until smooth.
  3. Pour the wet mixture into the dry ingredients and whisk until you have a smooth batter. Let it rest for about 10 minutes.
  4. Heat a non-stick skillet over medium heat, lightly greased with oil. Pour in about 1/4 cup of batter per crepe and cook for 2–4 minutes on each side until golden brown.
  5. For the apple filling, combine chopped apples with coconut sugar, plant-based milk, lemon juice, cornstarch, and cinnamon in another pan over medium heat. Cook until the apples are tender.
  6. Fill each crepe with the apple mixture and roll up gently before serving warm.
