  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon apple vinegar
  • 1 tablespoon sesame oil
  • ½ cup cornstarch
  • 3 tablespoons low-sodium soy sauce (for sauce)
  • Colorful bell peppers
  • Sichuan peppercorns
  • Fresh garlic
  • Fresh ginger
  • Vegetable oil (for frying)
  • 1 small onion (sliced)
  • 5 dried red chilies (deseeded, cut into 1 inch pieces)

Instructions

  1. Prepare the sauce by whisking together soy sauces, vinegar, sugar, and sesame oil in a bowl. Set aside.
  2. In another bowl, marinate chicken with soy sauce, apple vinegar, sesame oil, and cornstarch for 10 minutes.
  3. Heat vegetable oil in a wok until hot (325°F). Fry marinated chicken in batches until golden brown. Drain on paper towels.
  4. Stir-fry onions and bell peppers with garlic, ginger, and Sichuan peppercorns for a few minutes.
  5. Return chicken to the wok, pour in the prepared sauce, and stir-fry everything together for one more minute. Serve immediately.
