  • 1 medium yellow onion (chopped)
  • 1 packet chili seasoning
  • 2 cans fire-roasted diced tomatoes (14.5 oz each)
  • 1 can black beans (15 or 16 oz)
  • 1 can kidney beans (15 or 16 oz)
  • 1 can pinto beans (15 or 16 oz)
  • 1 can corn (15 or 16 oz)

Instructions

  1. Heat oil in a large pot over medium heat. Add chopped onion and cook until soft, about 4 minutes. Stir in chili seasoning and cook for another minute.
  2. Add all canned ingredients directly into the pot—do not drain any cans! Cover and let simmer for about 15 minutes.
  3. For a smoother texture, blend a cup of chili in a countertop blender until smooth, then return to the pot and stir well.
